Here is a delicious low carb egg meal to make over weekends as it takes a bit of time to make. However if you have time during the week then no problem! It takes about 10 minutes to prep an 30 minutes to cook.
SAUSAGE AND EGG MUFFIN CUPS
1/4 pound of chorizo or other sausage
1/4 pound of ground turkey or other meat
1/8 teaspoon of dried thyme
1/3 tablespoon dried parsley
1/16 teaspoon ground cayenne pepper or to taste
1/8 teaspoon paprika or to taste
A pinch of ground nutmeg
Salt to taste
1/4 cup red peppers diced
5 large eggs
1. Preheat oven to 350 degrees F.
2. Combine the chorizo and ground turkey until thoroughly mixed.
3. Add thyme, parsley, cayenne, paprika, nutmeg, salt, black pepper, peppers and 1 egg. Mix together with hand until all ingredients are incorporated.
4. Divide sausage mixture evenly between 4 muffin wells.
5 Crack an egg into each well and bake in oven for 25-30 minutes or until eggs are set. Top with cheese and hot sauce if desired.
